Azafran Bola is safflower, sold as dried threads in a bright orange-red that is used mainly for the color it gives. The flavor is mild and subtle, so it can be added generously without changing the seasoning of a dish. Mexican kitchens use it in rice, stews and sauce bases where a warm color is expected, and it gives large-batch cooks a consistent way to color food across every run.
