About Middle Eastern Spices
Middle Eastern cooking is built on warm spices and pulses. Chickpeas go into hummus and falafel with cumin and coriander, and haba beans make ful medames. Shawarma and kofta take cumin, allspice, cinnamon, cardamom and turmeric. Lentils and cumin make mujaddara, cardamom pods flavor coffee and rice, and white sesame is ground into tahini. Pistachios and walnuts fill baklava and ma'amoul.
Buy cumin, coriander and cardamom whole if you toast and grind your own baharat, or ground for shawarma marinades and production blends. Minimum order is 50 lb per product. Pick up at our Los Angeles warehouse Monday to Friday 7am to 3pm, take local delivery, or ship by pallet or container.
