Cardamom Pods – Whole are green pods with an intense, sweet-spicy aroma and a floral finish that fades quickly once ground, which is why most operators buy them whole. They are steeped into chai, ground into Indian masalas and savory spice blends, and used in baking and desserts, with Middle Eastern coffee and sweets drawing on the same pod. Whole pods can be crushed or ground in house so the aroma is released when it is needed rather than in the bag.
