Thai and Southeast Asian cooking balances heat, sour, salty and sweet. Birds eye chiles bring the heat to som tam, pad kra pao and tom yum. Tamarind gives pad thai sauce and sour curries their tang. Coriander seed, white pepper and turmeric go into curry pastes and satay marinade, green peppercorns into jungle curry and stir-fries, and star anise into pho broth and khao kha moo. Peanuts top pad thai and make satay sauce.
Birds eye chiles and green peppercorns are sold whole. Coriander and white pepper come whole or ground, turmeric ground. Tamarind comes dried, or as fresh whole pods. Minimum order is 50 lb per product. Pick up in Los Angeles Monday to Friday 7am to 3pm, or ship by pallet, truckload or container.
