California Chile – Whole is a mild dried pod at 500–2,500 SHU, chosen for its color and gentle sweetness more than its heat. Rehydrated and blended, it makes the smooth red base for enchilada sauce, chile pastes and stews, and it is the pod to reach for when a recipe needs full chile flavor without noticeable burn. Whole pods give a kitchen or plant control over how the chile is processed and keep flavor development consistent.
