Chia Seeds – Whole absorb liquid and form a gel, which is what makes them useful as a thickener and texture agent in commercial recipes. They go into bakery goods, beverages such as agua fresca de chía, puddings and functional food products, adding omega-3, fiber and protein in the process. The seeds scale easily for high-volume production and behave consistently from batch to batch, which suits co-packers as well as foodservice kitchens.
