Chilaca Chile – Whole is a dried pod with earthy, classic Mexican chile flavor and mild heat, rated at 1,000–2,500 SHU. The whole form supports rehydration and any custom processing you need, from blending into a smooth sauce to chopping for a stew. It is used in Mexican sauces, braises and regional preparations that call for chile character without a strong burn, and it gives kitchens and manufacturers a pod they can process to their own spec.
