Ghost Chile – Whole is the dried bhut jolokia pod, deep red and rated Extreme at 800,000–1,000,000 SHU, one of the hottest chiles in commercial use. The heat builds slowly and lasts, with a fruity edge behind it. It is used in small amounts for hot sauces, chile oils, extreme-heat seasonings and Northeast Indian cooking. Wear gloves when handling and avoid contact with eyes.
