Membrillo is quince paste: sweet, dense and fruity, firm enough to slice cleanly and portion by weight. It is served with cheese on Mediterranean and Latin American boards, baked into pastries and empanadas, and plated as a dessert component in restaurants and specialty retail. Because it arrives ready to use, there is no cooking or setting step in the kitchen, and slices come out consistent from one cut to the next. Refrigerate after opening.
