Bay Leaf – Whole is a dried leaf with an aromatic, herbal flavor and a slightly floral, eucalyptus-like edge that comes out slowly in liquid. It goes into stocks, soups, stews, braises and long-simmered sauces, from Italian ragù and Mediterranean bean soups to Mexican pozole and Southern gumbo, and is lifted out before service. Whole leaves are easy to count into large batches and easy to remove, which suits restaurant kettles and manufacturing lines alike.
