Cinnamon – Cassia Whole comes as whole bark sticks with a strong, sweet, spicy aroma. The sticks are infused into syrups, pickling brines and braising liquids, used whole in Chinese stocks and stews, or ground fresh for Indian spice blends and bakery mixes. Keeping the bark whole retains the aroma in storage and leaves the grind decision to the kitchen or the blending line, so one stock item covers infusion and powder alike.
