About Chinese Spices
Chinese kitchens use a handful of spices in quantity. Star anise and cassia go into red-braised pork and master stocks, and five spice blend seasons char siu and roast duck. Ground white pepper is the heat in hot and sour soup and wonton broth. Japanese chiles are fried whole for kung pao chicken and chili oil. Peanuts and cashews go into stir-fries, and white and black sesame into sesame balls and noodle dressings.
Buy star anise, cassia and white pepper whole for stocks and in-house grinding, or ground white pepper for soups and batters. MSG and dried garlic, chopped or granulated, cover the rest of the wok station. Minimum order is 50 lb per product. Pick up in Los Angeles Monday to Friday 7am to 3pm, or ship by pallet or truckload.
