About Mexican Chiles & Spices
Mexican cooking runs on dried chiles. Guajillo and ancho are the base of red enchilada sauce, birria and pozole rojo. Pasilla negro, mulato and ancho go into mole with white sesame seeds, cinnamon and Ibarra chocolate. Arbol and chipotle bring heat and smoke to salsas and adobo, and achiote paste makes cochinita pibil and al pastor. Cumin, whole oregano, bay leaf and menudo seasoning cover pozole, menudo and frijoles de olla.
Most chiles are sold whole, for toasting and soaking. Ancho, guajillo, chipotle, morita, pasilla negro and arbol also come ground for rubs and seasoning lines. Minimum order is 50 lb per product. Pick up at our Los Angeles warehouse Monday to Friday 7am to 3pm, take local delivery, or ship by pallet, truckload or container.
